Today we are making a wonderful recipe that will nourish your brain, helping you stay focused and sharp: a sweet potato breakfast casserole loaded with veggies, healthy fats and protein. 

It took me a few tries to make this recipe taste amazing. But I am glad that I stuck with it and kept tweaking the recipe because the final result is not only nutritious, but also quite delicious.

I knew that I wanted the breakfast casserole to include ground meat, eggs and sweet potato. I also knew that I wanted to mix all the ingredients in one bowl, because I like to make it easy for myself in the kitchen. 

From this starting point, I added more veggies (because they are awesome) and a few favourite spices.

I love the final result and I hope you’ll love it too!

Good To Know

We all know that sweet potatoes have sugar. The good news is that it’s not added sugar – it’s naturally occurring. The even better news is that the fiber in the sweet potato helps the sugar get released slowly in the blood, which in turn won’t cause highs and lows in our energy levels.

Did you know that sweet potatoes have vitamins A, B6, and C that are each beneficial to the brain?

Substitutions

The coconut milk can be replaced with your favourite milk (dairy, almond, oat, etc.)

I like that the sweet potato brings a bit of sweetness to the casserole, but you could replace it with regular potato, to make it more savory.

Make it vegetarian

Replace 1 lb of meat with 1 lb of mixture of mushrooms, cauliflower and broccoli.

I find that although I love sweet potatoes, I don’t make enough dishes with them. Do you love sweet potatoes? What is your favourite meal to make with sweet potatoes?

Extra health points

Serve this casserole with sour cream, green onions, avocado slices and cherry tomatoes. They not only bring the nutrition profile higher, but also add flavour.

Storing, freezing and reheating tips

Store

In the fridge for up to 5 days in an air-tight container. 

Freeze

I don’t recommend freezing, as it becomes watery once thawed.

Reheat

In the microwave or in the oven.

Ingredients

Units Scale
  • 1 lb ground pork (or your favourite meat)
  • 1/3 cup coconut milk (or your favourite milk)
  • 12 large eggs
  • 4 cloves garlic, minced
  • 1 onion, chopped very small
  • 1 red bell pepper, diced
  • 1 lb sweet potatoes, peeled and diced into 1/2 inch cubes
  • 1 tsp sea salt
  • 1/2 tsp garlic powder
  • 1/4 tsp cumin
  • 1 tablespoon coconut oil
  • cheese, grated
  • sour cream

Serve with:

  • green onion (chopped small)
  • avocado slices
  • cherry tomatoes

Instructions

  1. Preheat the oven to 400F (200 C).
  2. Grease a 9×13” oven-proof pan with coconut oil.
  3. Mix the ground meat with the milk in a big bowl.
  4. Add the spices (sea salt, garlic powder and cumin). Mix well.
  5. Add the eggs, whole. Mix well.
  6. Add the garlic, onion (chopped very small), bell pepper and sweet potato. Mix well.
  7. Transfer the entire mixture to the greased oven-proof pan.
  8. Bake for 60 minutes if your oven runs hot or 75 minutes if it doesn’t, until the center is cooked through and the edges and the top are slightly golden.
  9. Remove from the oven, sprinkle cheese on top and place it back in the turned-off oven for 10 more minutes until the cheese becomes light-medium brown.
  10. Slice it in squares.
  11. Serve with sour cream, green onion, cherry tomatoes and avocado slices.

Notes

Your sweet potato might be a little over or under 1lb. That’s okay, use all of it.

I have found (and my family and friends agree) that the sour cream really takes the casserole up a notch. If you don’t have a sensitivity to dairy, please don’t forget to serve it with the sour cream. Soooo yummy!

This is a similar oven-proof dish to the one I use. It’s easy to clean and it’s big enough to feed a crowd.
