Fudgy Pistachio Raspberry Paleo Brownies – Benefits For The Brain
Spinach is an ingredient beneficial for mood due to its rich nutrient content. Magnesium supports neurotransmitter function and serotonin production. Folate, an essential B-vitamin, helps with mood regulation. Antioxidants and iron contribute to overall brain health and energy levels.
Did you know that pistachios are rich in vitamin B6, healthy fats, protein and fibre? They boost mood by helping with production of serotonin and keeping elevated energy levels – pistachios are amazing!
Raspberries are mood-boosting through antioxidants, such as vitamin C and quercetin, which help fight oxidative stress and inflammation. The fibre in raspberries supports gut health which in turn has a positive effect on mood.
Use your favourite nut butter in this recipe. Mine is almond butter because it’s rich in magnesium, which supports serotonin production. Almond butter also has healthy fats and protein, optimizing brain function and blood sugar levels, which in turn positively influences mood.
How To Make This Easy Pistachio Raspberry Brownies
Step 1
Preheat the oven to 350 F.
Grease a round 7-inch oven-proof pan with the avocado oil.
Step 2
Add eggs, nut butter, coconut flour, coconut sugar, cocoa powder, fresh baby spinach leaves, vanilla extract and sea salt to a blender.
Blend well until smooth and creamy.
Step 3
Pour the batter into the prepared oven-proof pan.
Step 4
Fold in the chocolate chips and a ½ cup pistachios.
Step 5
Top with raspberries and a ¼ cup pistachios.
Step 6
Bake for 35 minutes or until a toothpick inserted and removed shows a very thin layer of batter on it. Make sure not to overbake the brownies so they don’t become crumbly or hard.
Remove the brownies from the oven.
Step 7
Allow the brownies to cool for at least 30 minutes before removing from the pan.
Slice into triangles. Clean the knife after each cut.
