I decided to make this nourishing brain-healthy cabbage sausage soup on a whim, after spotting a beautiful cabbage at the farmers’ market. After mixing the cabbage with more veggies and some protein, this lovely soup was born.

I like to use a wide variety of colorful veggies in the meals I make. Have a look at the photos of this recipe! Green from celery and cabbage, red from bell pepper, and orange from carrots. Such a beautiful meal AND it gets bonus points because it’s loaded with fiber. Did you know that fiber plays an important role in lowering the risk of dementia? How awesome is that?

Substitutions
I am not a big fan of vegan meat replacements as many contain additives, seed oils and preservatives, so I always like to use wholefoods instead. Tempeh, peas, lentils, quinoa would be lovely meat substitutions here as they are rich in protein. Even more, I would also add some nutritional yeast and tamari sauce to the broth to make it more flavourful.
Make it
Gluten free – The recipe contains no gluten.
Dairy free – The recipe contains no dairy.
Vegan – Replace meat with tempeh, peas, lentils, quinoa.
Storing, freezing and reheating tips
Store
In the fridge in an air-tight container for up to 5 days.
Freeze
For up to 6 months. Allow to cool completely, then portion it in freezer-safe containers, making sure that you leave enough space at the top to allow the soup to expand as it freezes. Label the container with the name of the recipe and the date it was frozen.
If you plan on freezing the entire recipe, cook the veggies slightly al dente, as they will soften when frozen and then thawed. Thaw the soup in the fridge overnight.
Reheat
In the microwave or in a small saucepan on the stovetop.

Ingredients
- 1 tbsp coconut oil
- 4 cloves garlic, minced
- 1 onion, diced
- 4 celery stalks, diced
- 1 red bell pepper, diced
- 1 cup carrots, diced
- 6 cups water
- 5 cups cabbage, chopped
- 375 g fresh sausage, sliced
- 2 tsp onion powder
- 2 tsp garlic powder
- 1 tsp oregano
- 2 tsp sea salt
- parsley – optional
- chili flakes – optional
Instructions
- Cook the garlic and onion in the coconut oil for 5 minutes.
- Add the celery, bell pepper and carrots, then cook for 5 more minutes.
- Add the water, cabbage, sausage, onion powder, garlic powder, oregano and sea salt.
- Bring to a boil and then turn the heat down to simmer.
- Allow the soup to simmer until the veggies are soft (approximately 40 minutes).
- Remove from heat and taste. Add more sea salt if needed.
- Sprinkle parsley on top of each bowl when serving.
- And if you’d like to turn up the heat, add some chili flakes.
We go crazy for this soup at my house. I hope you’ll enjoy it too!
Notes
You can use any meat or other types of protein you’d like. I used fresh pork sausage this time. I have also made this cabbage sausage soup with garlic sausage and with ham and it still turned out delicious.
