Puffed Quinoa Chocolate Cookies – Benefits For The Brain

I am not trying to pretend that these cookies are healthy or that you should eat them every day. They are healthier than other cookies thanks to puffed quinoa, coconut flakes and coconut oil – which are all brain-healthy ingredients. But these quinoa cookies still have sugar from the chocolate chips (unless you use sugar-free chocolate chips). 

Depending on your health goals, you can eat a few cookies once in a while or avoid added sugar altogether (if you are channeling your inner Bryan Johnson who is one of my favourite people on the planet).

How To Make This Tasty Puffed Quinoa Chocolate Cookies

Step 1

In a small cast iron enameled pot or in a double boiler, combine the chocolate chips with the coconut oil.

Step 2

Allow the chocolate chips to melt fully, then remove from heat.

Step 3

While the chocolate mixture is cooling, mix the puffed quinoa with the coconut flakes in a medium-sized bowl.

Step 4

Pour the melted chocolate chips over the quinoa mixture and mix until everything is well combined.

Step 5

Using two spoons or a cookie scoop, make small cookies on two baking sheets lined with parchment paper. The number of cookies you make might be higher or lower, depending on how big your cookies are.

Step 6

You can use your fingers to give the cookies a round shape.

Step 7

Place baking sheets into the fridge until the quinoa cookies are set, around 30 min.

Store

Store the cookies in the fridge in an airtight container for up to 5 days (if they can last that long).

Freeze

Notes

Use your favourite chocolate chips. I prefer to use a mix of milk chocolate and semi-sweet chocolate chips for that perfect sweetness, but feel free to experiment with only dark chocolate chips if you prefer a richer flavor.

This is my favourite puffed quinoa. I usually buy it from my local health food store. When it’s out of stock, I buy it from here.
