They are healthier than other cookies thanks to puffed quinoa, coconut flakes and coconut oil – which are all brain-healthy ingredients. But these quinoa cookies still have sugar from the chocolate chips (unless you use sugar-free chocolate chips).
Depending on your health goals, you can eat a few cookies once in a while or avoid added sugar altogether (if you are channeling your inner Bryan Johnson who is one of my favourite people on the planet).
Have you ever tried puffed quinoa in desserts? It’s similar to puffed rice, but it adds a bit more protein, fiber and iron to up your cookie game.
How To Make This Tasty Puffed Quinoa Chocolate Cookies
Step 1
In a small cast iron enameled pot or in a double boiler, combine the chocolate chips with the coconut oil.

Allow the chocolate chips to melt fully, then remove from heat.

Use your favourite chocolate chips. I prefer to use a mix of milk chocolate and semi-sweet chocolate chips for that perfect sweetness, but feel free to experiment with only dark chocolate chips if you prefer a richer flavor.
