Ingredients
- 3 cups boiled or grilled chicken breast, cooled and cut in bite-sized pieces
- 1/2 cup celery, diced
- 3/4 cup grapes, quartered
- 1 small green onion, chopped
- 1/2 cup pecans, broken in small pieces, toasted and cooled
Dressing
- 1/3 cup mayo
- 1 tbsp lemon juice
- 2 tbsp Dijon mustard
- 1/2 tsp sea salt
- 1/4 tsp black pepper
- A few sprigs of fresh parsley (see notes)
Serve with rice crackers, toast, tortillas, cucumber rounds, or lettuce leaves.
Instructions

In a medium-sized bowl, combine the salad ingredients: the cooked chicken breast, celery, grapes, green onion and pecans.

In a small mason jar with a lid, combine the dressing ingredients: mayo, lemon juice, Dijon mustard, sea salt and black pepper. Securely fasten the lid and shake well to blend the dressing ingredients.

Pour the dressing over the salad, add the parsley, and then mix all the ingredients thoroughly.

Taste and add more spices or lemon juices desired.

Chill in the fridge for at least one hour to allow the flavours to meld together.

Notes
You can add not only parsley, but also dill and other herbs you love.
