Ingredients

  • 1 lb ground pork (or your favourite meat)
  • 1/3 cup coconut milk (or your favourite milk)
  • 12 large eggs
  • 4 cloves garlic, minced
  • 1 onion, chopped very small
  • 1 red bell pepper, diced
  • 1 lb sweet potatoes, peeled and diced into 1/2 inch cubes
  • 1 tsp sea salt
  • 1/2 tsp garlic powder
  • 1/4 tsp cumin
  • 1 tablespoon coconut oil
  • cheese, grated
  • sour cream

Serve with:

  • green onion (chopped small)
  • avocado slices
  • cherry tomatoes

Instructions

  1. Preheat the oven to 400F (200 C).
  2. Grease a 9×13” oven-proof pan with coconut oil.
  3. Mix the ground meat with the milk in a big bowl.
  4. Add the spices (sea salt, garlic powder and cumin). Mix well.
  5. Add the eggs, whole. Mix well.
  6. Add the garlic, onion (chopped very small), bell pepper and sweet potato. Mix well.
  7. Transfer the entire mixture to the greased oven-proof pan.
  8. Bake for 60 minutes if your oven runs hot or 75 minutes if it doesn’t, until the center is cooked through and the edges and the top are slightly golden.
  9. Remove from the oven, sprinkle cheese on top and place it back in the turned-off oven for 10 more minutes until the cheese becomes light-medium brown.
  10. Slice it in squares.
  11. Serve with sour cream, green onion, cherry tomatoes and avocado slices.

Notes

Your sweet potato might be a little over or under 1lb. That’s okay, use all of it.

I have found (and my family and friends agree) that the sour cream really takes the casserole up a notch. If you don’t have a sensitivity to dairy, please don’t forget to serve it with the sour cream. Soooo yummy!

This is a similar oven-proof dish to the one I use. It’s easy to clean and it’s big enough to feed a crowd.
