Ingredients

  • 1 tbsp coconut oil
  • 4 cloves garlic, minced
  • 1 onion, diced
  • 4 celery stalks, diced
  • 1 red bell pepper, diced
  • 1 cup carrots, diced
  • 6 cups water
  • 5 cups cabbage, chopped
  • 375 g fresh sausage, sliced
  • 2 tsp onion powder
  • 2 tsp garlic powder
  • 1 tsp oregano
  • 2 tsp sea salt
  • parsley – optional
  • chili flakes – optional

Instructions

  1. Cook the garlic and onion in the coconut oil for 5 minutes. 
  2. Add the celery, bell pepper and carrots, then cook for 5 more minutes.
  3. Add the water, cabbage, sausage, onion powder, garlic powder, oregano and sea salt. 
  4. Bring to a boil and then turn the heat down to simmer.
  5. Allow the soup to simmer until the veggies are soft (approximately 40 minutes).
  6. Remove from heat and taste. Add more sea salt if needed.
  7. Sprinkle parsley on top of each bowl when serving.
  8. And if you’d like to turn up the heat, add some chili flakes.

We go crazy for this soup at my house. I hope you’ll enjoy it too!


Notes

You can use any meat or other types of protein you’d like. I used fresh pork sausage this time. I have also made this cabbage sausage soup with garlic sausage and with ham and it still turned out delicious.
