Looking for a healthy and delicious meal option that’s quick and easy to prepare? Look no further than a quinoa salad! This versatile dish is perfect for a lunch or dinner and it’s sure to satisfy your taste buds and keep you feeling full and energized.


Ingredients

Units Scale
  • 1 cup raw quinoa
  • 1 can (540 ml) chickpeas, drained and rinsed
  • 1 cup chopped cherry tomatoes
  • 1 cup grated carrots
  • 1 diced yellow bell pepper
  • 1 cup diced cucumber
  • 3 diced celery stalks
  • 1/2 cup diced red onion
  • 1 cup crumbled feta
  • 1 cup pitted and sliced black olives
  • 2 tablespoons chopped green onion
  • chopped parsley

Dressing:

  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 3 cloves garlic

Instructions

  1. We start by cooking the rinsed quinoa in 2 cups of water, on medium heat, until the quinoa has absorbed all of the water. Allow the quinoa to cool.
  2. Chop all the ingredients.
  3. Combine all the ingredients in a large bowl.
  4. Drizzle the dressing over the salad and gently toss everything together.
  5. Chill the salad so the flavours have a chance to combine and really come out.

Enjoy!


Notes

I like to cut the veggies quite small so there is a bit of everything in each bite.
