Ingredients
- 1.5 lb chicken breast, cut into bite-size pieces
- 1/3 cup arrowroot powder (see notes)
- 1 red bell pepper, diced
- 1 orange bell pepper, diced
- 1 (398 ml) can pineapple slices, cut in bite-size pieces (save the juice for the sauce)
Sweet and sour sauce
- 3 small garlic cloves, minced
- 1/3 cup coconut sugar (see notes)
- pineapple juice from the can of pineapple slices
- 1/4 cup apple cider vinegar
- 2 tbsp tamari sauce (see notes)
- 3 tbsp water + 2 tbsp arrowroot powder
Serve with brown rice. Garnish with white sesame seeds, green onions, chili flakes.
Instructions
The recipe steps below are presented in an order that allows you to work on chicken, sauce and rice at the same time.

If you serve this meal with brown rice, start boiling the rice now, as it takes approximately 35 minutes to cook.

Coat the chicken pieces with arrowroot powder.

Fry the chicken pieces in coconut oil.

While the chicken is cooking, mix all the sauce ingredients in a small pan (garlic, coconut sugar, pineapple juice, apple cider vinegar, tamari sauce) and heat everything up.

Mix water with arrowroot powder in a small bowl until the powder is dissolved.

When the chicken is halfway done (10-15 minutes), add the bell peppers.

When the sauce starts to boil, add the arrowroot powder mixture, turn the heat down, and simmer for 5 more minutes until the sauce thickens.

When the chicken and bell peppers are cooked (15-20 more minutes), add the pineapple and allow everything to cook for an additional 5 minutes.

Add the sweet and sour sauce to the cooked chicken, veggies and pineapple.

Garnish the dish with sesame seeds, green onions and chili flakes.

Serve the sweet and sour chicken warm, alongside the cooked brown rice.

Notes
If you don’t have arrowroot powder, feel free to substitute it with cornstarch.
You can use your preferred type of solid sugar.
