Description
Indulge in the rich and chocolatey goodness of these delightful chocolate quinoa cookies. With a perfect blend of luscious chocolate chips and coconut oil, and the wholesome addition of puffed quinoa and coconut flakes, each bite is irresistible and satisfying.
Ingredients
- 1 and 1/3 cup chocolate chips (see notes)
- 1 tbsp coconut oil
- 2 cups puffed quinoa (see notes)
- 1/3 cup coconut flakes
Instructions

In a small cast iron enameled pot or double boiler, combine the chocolate chips with the coconut oil.

Allow the chocolate chips to melt fully, then remove from heat.

While the chocolate mixture is cooling, mix the puffed quinoa with the coconut flakes in a medium-sized bowl.

Pour the melted chocolate chips over the quinoa mixture and mix until everything is well combined.

Using two spoons or a cookie scoop, make small cookies on two baking sheets lined with parchment paper. The number of cookies you make might be higher or lower, depending on how big your cookies are.

You can use your fingers to give the cookies a round shape.

Place baking sheets into the fridge until the quinoa cookies are set, around 30 min.

Notes
Use your favourite chocolate chips. I prefer to use a mix of milk chocolate and semi-sweet chocolate chips for that perfect sweetness, but feel free to experiment with only dark chocolate chips if you prefer a richer flavor.
